Cheap easy family meals for those who hate to cook.

Add me in the 'don't like to cook' category. One of the things I do is always keep several super simple 'go to' things in the freezer:
Breakfast for dinner (pancakes, waffles, omelettes, eggs with toast/bacon/sausage)
hot dogs and fries
hamburgers
lots of salad fixings with chopped meats and cheese (or chicken tenders to toss in the george foreman grill)
pasta (or frozen raviolis) with jar sauce (which I add seasonings to to make it betteeer)
soup and sandwiches: grilled cheese, ham and cheese, turkey, roast beef, tuna fish. Add some celery/carrot sticks or a salad and canned peaches and its a meal.
I also usually try to keep a ham steak in the fridge, just heat it up in the skillet, add some mac and cheese or boxed augratin potatoes and a veggie.

and last, I always buy one of those refrigerated pizzas from Walmart and have that ready to cook for a busy night when I'm running kids around.

Then I try to keep some marinated chicken breasts and steaks in the freezer so that i can toss those on the grill. Add some rice (cooked in the microwave rice cooker) and some sort of veggie, either fresh or frozen.

We don't eat gourmet meals, but there is always food. And in a pinch, the kids make peanut butter and jelly or a bowl of cereal.
 
A very easy thing to crockpot - is frozen turkey breast. Just throw it in the crockpot with a bit of water on the bottom. Let it cook on low for 8 hours and it's DONE! That with some Stove Top stuffing and you've got the easiest meal!

I hadn't thought of this, other than Thanksgiving we don't ever have turkey...great idea! :)
 
I don't like to cook either. Though my husband wishes I would make four course meals for him nightly. HA ya right!

Beef and rice fiesta

1 pound ground beef or turkey, browned and drained
1 can fiesta corn (with red and green peppers)
-with corn can fill with one can water and 1 can uncooked white rice
1 can golden mushroom soup
-cover and simmer for 10 minutes.

Cola Chicken

Four raw chicken breasts
1 12oz can diet coke
1 12oz can ketchup

I usually steam broccoli in the microwave. Buy it at costco or sams. Grab what you want and throw in a steam bag. Too easy.

Combine all 3 in skillet, bring to rolling boil, reduce heat and simmer for 45 minutes. Be careful to not let the sauce burn. NEVER had chicken this tender. The sauce YUM and I hate coke and ketchup! lol

I'm an extremely picky eater as well, nor am I a big fan of crockpot meals, so we're pretty limited too on meals ;)

One thing that I've started recently is buying a large package of chicken breast, dicing them on Saturday evening, and cooking it all on Sunday afternoon. Then I measure out 2 cups and put them in individual freezer bags, ready to be pulled out and thawed during the week. This seems to be working wonderfully! I was able to make a chicken pot pie on a busy weekday evening, making the gravy from scratch.

I also use allrecipes.com alot, using their ingredients search to find recipes for my picky preferences, which normally include chicken and cheese :laughing:
 
While I love to cook, I love it even more when I have something easy!

Baked mac-n-cheese with stewed tomatoes and peas
Hamburger rice and stewed tomatoes
Baked mac-n-cheese with ham and peas
Dirty rice with hamburger
Faux stroganoff
Chicken noodle soup (in crockpot) and breadsticks
enchiladas
goulash
veggie beef soup ( in crock pot) with breadsticks
french dip

You don't need to be eating fast food/out of a box for easy, quick meals! All it takes is a little planning.

And yes, your kids and DH need to grow up and help you out!!!!
