Do any of the full-service restaurants at the various deluxe resorts have carryout service or is the only option to have a sit-down meal?

I do believe that all TS restaurants are not set up for carry out. That would include the resorts.
Now I am not sure about room service. Whether or not they could deliever that way???

If you want to eat the food offered at a TS restaurant then typically you have to eat there. There may be the odd exceptions but I wouldn't count on being able to get food to go from any TS location whether it's in a park or at a resort. Deluxe resorts do have CS locations that sell food to go. I know the food's not nearly as elegant as the TS meals but it is an option. As Nadjalu said, room service is also an option if you want the TS restaurant type of food, assuming you're staying at the resort of course (this doesn't work for resort hopping obviously).

It's been several years, and the particular restaurant/meal combo isn't an option anymore... but...

I've had someone bring a full breakfast from Boatwright's (Port Orleans Riverside) back to the room, twice.

(edited): oops -- sorry, just noticed you asked about Deluxe resorts :)

The only restaurant that I know allows this (maybe for a limited menu) is Le Cellier. I couldn't get a reservation for the week I stayed at WDW but I walked up the check-in podium and asked for some pretzel bread and cheese soup. I waited maybe 10-15 minutes and walked out with my order. I didn't try to order anything else so I don't know what they would have done if I'd asked for a steak dinner.

They would not have allowed you to take away a steak dinner at Le Cellier. And if the restaurant was at a busy peak time, they might not have accommodated your bread and soup request. That would be up to the judgement and discretion of the cast members working at the podium.

As a general rule, the table service restaurants at Disney and not set up for take out meals.

You can ask, but be prepared to be turned down. Some restaurants might do it. There are reports that the Wave will. As far as the parks, Le Cellier might on occasion allow guests to carry out soup, but not a full meal. Via Napoli allows no carryout orders at all.

You can definitely carry out sushi at any time from the Kona sushi bar at the Polynesian.

I do know that Olivia's at OKW will not allow any carryout dining at all. They used to, but they stopped it after the dining plan came into being. The story was, apparently, that guests expected to take out their food from Olivia's and pay with a counter service credit rather than a table service credit, so they just stopped allowing carryout.

On my last trip to WDW we went to Beaches and Cream for dinner. My son wasn't feeling great and puked on the table and on me right after we ordered our dinner. Several CM's came over and put towels all over us to help us clean up. The mangager said they don't normally allow to-go meals, but they were packaging up our dinners due to our situation. Before that point, I never even thought about whether they did to-go dinners or not. Later I was wondering if they don't do to-go dinners at all or maybe they don't allow them when you're on the Dining Plan. I wasn't sure, but I was glad she said they were making an exception for us. They also had a DVC van wisk us away from the Yacht Club lobby to our resort. I was so thankful for the way Disney took care of us.

Beaches & Cream is another restaurant that, under normal circumstances, will not do any carryout food orders; dining plan or no dining plan makes no difference.

At the Polynesian you can take out Sushi from the Kona Island Sushi Bar. Plus over there you can also order off the full dinner menu from the Kona Cafe, however I am not sure if you are able to take out any of those items.

They definitely have leftover boxes, so you could make an ADR, and ask for your check and a box immediately after they bring you your food. I expect you would still be expected to tip.

Once I had gotten overheated and didn't feel like going with my mom and husband to Yachtsman, so sent them on ahead. Once I got a bath and got cooled off I started feeling better, so called my husband and asked him to bring me something back. They let him order an appetizer and a couple of sides, but would not let him order a steak to go. He came back with a seafood salad appetizer, an order of mushrooms, and an order of mac and cheese.:rotfl: They were in clear plastic containers placed in bags. I really wanted that steak, but it wasn't allowed, even though they had eaten there.:rolleyes1:rotfl:
