Carrots?

Both of my kids love canned carrots so I wanted to serve some carrots for our Christmas meal. I have never made a carrot dish so does anyone have any good carrot ideas? I have heard that there is a way to make kind of a sweet carrot dish with maybe brown sugar or something. :confused3

I used to make candied carrots (like candied yams) for DH when we were first married, but stopped because I can't eat them but they always tempted me. (I know, I'm mean. LOL)

Anyway, I just melted butter in a pan, put in the drained carrots (or just used raw ones & did them longer) and added brown sugar. You really have to watch it or the sugar will burn, but that's all there is to it.
 
I like to toss mine with butter and a little cinnamon - yum!

For glazed carrots I toss them in some apricot or peach jam to glaze them - again yum!
 

My mother would start with fresh raw carrots and slice them julienne style. Then, she would place them in a pot with some water, brown sugar and butter and allow them to simmer on a burner until they cooked thoroughly (maybe a bit longer depending on what you like). My son and I love them this way. The carrots do not have any sort of glaze, but they are yummy because they have soaked up the flavors from the brown sugar and butter.
 
I peel and slice raw carrots longways - a bit thicker than julienne - and toss them in a mixture of oil, honey and fresh thyme then throw them in the oven under the potatoes for about 40 mins. Yummy!
