I spoke regarding cancelling our booking earlier this month and the details dropped out of MDE.

is there a specific email address I can use to contact reservations?
I have never received a cancellation email, neither on the hotel nor the DVC side of things. I did cancel a package on Friday and the CM told me that a refund could take up to two billing cycles on my credit card (though I suspect it will be much shorter than that).

we paid with Disney gift cards which I no longer have & this seemed to complicate matters somewhat.
I was advised payments will be returned to the original gift card numbers and then transferred to an email credit.

We've gone multiple times a year for the past 15 years and I don't recall ever getting a cancellation notice. I totally agree that they should generate them though - we need to have some kind of record that a reservation has been cancelled.

Disney is extremely reliable about making refunds, even though they never send cancellation emails (a lot of the time, I don't even get reservation confirmation emails).
Disney refunds money back to the original form of payment, which in your case is those gift cards, which is why you should always keep the gift cards until they are actually used up by non-refundable goods/activities (such as after the resort stay, after washing the Disney clothes you bought, etc.)
Normally you would be SOL, but since you say a promise was made to transfer the gift card balance to an email credit (never heard of this before), then you do have hope. I think you're going to have to call them to follow up on that, though.

You are not SOL if you don't have the original gift cards. You just need to tell them that you no longer have them and they will issue a new gift card for the refund. You can often request an e-gift card for the refund.
