I'm wondering if this is possible, and if so, does it cause the server any problems in handling the check? TIA
Can you use DDE for adult beverages along with DDP?

You certainly can! 
The servers just have to do two checks but none seemed to mind. We were always careful to let them know at the beginning of the meal though.
The gratuity is also usually/maybe always added onto the DDE check as well BTW.
