I know I can make FP reservations 60 days before, but I only have half of the days of our 10 day vacation planned out. We will have park hopper passes, so for the other days I would like to just go with the flow (besides our dining ADRs). For those days we go with the flow, will I be able to get FP at all for the park(s) we decide to go to that day? I don't want to plan every minute of our vacation.

Yep, no problem at all. We change plans all the time and book FP that morning on the bus to the park.

Ok, thank you! So booking FP 60 days before isn't really necessary? It's hard when you don't exactly know where you will be at the moment.

This is a bit tricky to answer.
For Some rides, yes it is necessary.
For Any ride, no.
There will be something you can FP day of, no fears
Only you know if those will be FP for rides you want to ride
If you want to ride any of the high value rides you will want to plan them in advance
