Can you get discount on associate hotels too or just the Disney ones with AP's?

I,ve never heard of annual pass discount for eurostar.
DLP only offers annual pass discount on its onsite hotels i think ~ but you could certainly ask about the associated hotels when you phone them.

I too have never heard about Eurostar giving discounts for AP holders, can't see it happening as they are 2 separate companies

Indeed - Eurostar are nothing to do with Disney so you won't see a discount there. If you work for Eurostar or at Ashford International the discounts are huge!
