I have a Deluxe Dining package as part of packaged stay deal (for a work conference). Fine, that works for me but I don't see anyway I would want to eat three table meals per/day. Too much food.

On the other hand, there is sooo much good food to try at Disney. Would I be able to order two separate meals at dinner so I could try a little bit of each?

You probably can, but that's a TON of food at one meal. Is there someone you might be able to treat to dinner? You can use your credits to pay for someone else's meal.
 
You don't have to eat 3 meals per day. You can do a regular meal for one credit and a signature meal for 2 credits. For the most part, the food at the signatures is much more interesting than the 1 TS places.

I second that.

If you don't want 3 separate meals, make sure that one of the meals is at a signature.
 

You get three meals per night, so be sure you stretch it out for your arrival and departure day.
