Can we still book longer stay than we need to get the discount?

Our actual vacation dates are not available for the free dining but if I extend the vacation by 3 extra nights , it is available! Can I book it then cancel the extra nights just to get the free dining?

Your arrival day must be within the dates of the free dining offer in order to qualify. If you are arriving 3 days before FD starts or 3 days after it ends you will not qualify. If your arrival is 3 days before the start of FD you could make 2 separate reservations. The first to cover the non-qualifying nights. The second reservation would start on the day FD starts and will cover the rest of your stay. Note that the FD special requires a minimum stay of 3 nights and 2 day tickets with parkhopper or Water Parks & More for everyone 3 years and older.

We wanted Nov 8 th to the 15 th but it's showing the resort not available. I f I make it shorter just to the 12 th , it's available or longer to the 18 th, it's available! Don't know what to do! 4 nights is too short but 10 nights is too long! Decisions...

You used to be able to book more nights than you needed & then drop the extra nights & keep your discount. However in just the last few days, that has apparently changed. There are a few threads reporting a new policy: if you attempt to change a reservation made with a discount, the discount has to be available for your new dates or you will lose the discount. So that strategy of booking more nights than needed & then dropping them probably won't work anymore.

Would you consider a split stay? If you are looking for a room only discount, you might be able to get a discount at 2 different resorts to make up your days. Or try just booking those last few nights you need seperately. It might be the specific room category isn't available for all your nights. Might involve changing rooms if that works, but at least you'd get your discount. This works well with a room only discount but not as well with free dining since you'd have to buy tickets with each package.
