Can we really take 2 little girls from down under to WDW next year??

My name is Cathy, 31 from Down under. I've just had my 2nd daughter! She is 8 weeks old. My husband and I are mega addicted to holidaying at WDW, we are happiest when there is a plan in the works.

So here's what we are thinking:

1 week at WDW aprox Feb 24th-March 3rd 2017. Stevie will be 2.5 years old, and Maggie 8 months old.
We love Caribbean resort and also Riverside. We are also keen on the dining plan, we figure thats the best way to make sure we get to as many character dining experiences as possible!
We learnt from last time, with only a 13 month old that we need to go slower now! (Not just adults, makes it hard) So we are thinking more resort time and 4 maybe 5 park days.

Questions:
Are there usually any discount offers around that time?
We haven't stayed at Value resorts before, are they that different to the moderates I've mentioned? (we are thinking about the bus ride time also)
Tips for travelling with 2 bubbas (are we crazy)
Is Feb/March a good time to go?
Anything else I need to think about.

NO I don't think your crazy you've already managed that long flight with one kiddo and that would scare me so you're already a pro at that!

I like values I've only ever stayed at them but let me give you my opinion on them.
All Star Sports, & Movies (as well as Music) are fine but sharing a bus at times can cause congestion at the bus stops.
I would consider All Star Music Suite though because of the room it offers so you can set up a pack and play or mini crib for baby. It also has a kitchenette option with microwave and mini fridge. See below.

Pop Century is nice but I don't find it anything special. I would either get the family suite or go to the Moderates.

The weather is fabulous during that time. A bit cool at times so bring a jacket but not frigid.
Discounts are sometimes offered on rooms. But considering you're travelling all the way from Down Under there could very well be different package options. I would get in touch with a travel agent right away to see what's possible.

Also let Disney know you will need a mini crib for the baby and they will bring it to the room for you. They will do this at any hotel.
