Dinner @ Boma (??)

TUES - EPCOT - All Day (?)
Lunch @ Beaches & Cream
Dinner @ Cape May Cafe (?)

WED - Universal Studios
Dinner @ ? Boardwalk - ESPN Zone?

THURS - Typhoon Lagoon,
eat lunch there
MNSSHP & Dinner @ LTT

FRI - FREE DAY (SUGGESTIONS?)

SAT - MK All Day (last full day)

I probably spent 2 1/2 days at Epcot and could have spent more, so you might find one day just isn't enough--if fact one day isn't enough to see everything (though I technically saw and did everything in about a day and a half--I just enjoyed it that much). I highly recommened checking out one of the World Showcase restaurants. You might want to do Epcot for at least another half-day on your free day.
 
I would do MK on a non-EE day, not Saturday or Sunday. The weekends there are usually a lot more crowded than during the week.
 
I agree with Bojangles, don't do MK on a weekend. . . WAY too busy (a lot of locals come around on the weekends).

Then, on your day off, have you ever been to all of the Disney resorts? If not, I suggest taking at least part of the day to visit them -- they are SOO amazing. It would be a free adventure and you can just use Disney transportation, which would be fun. You could even eat at some of the restaurants (depending on how busy they are and which ones) at the resorts. We did that on the first visit we ever took and it was great. I was amazed at how beautiful Disney does EVERYTHING.
 

if I switch the MK day from the weekend to a weekday,
which day would you pick and why??
 
I agree with Bojangles that you should avoid MK on an EE day if you are staying offsite. I take it LBV is Lake Buena Vista? But I don't think I could spend my first two days in the park without doing MK. Here's what I would do:

Sat: MK. You might want to go a little later in the afternoon and skip the hotel break. Then you could do your Crystal Palace dinner, do main street and some rides, as well as Spectro and/or Wishes.

Sun: AK a.m./MK p.m. Ohana sounds good for dinner.

Mon: MGM all day with lunch at sci fi sounds good. If you want to do ESPN Zone and Boardwalk this would be a good time because it's right there. I found ESPN food to be mediocre and it may be crowded for Mon. night football. I prefer Spoodles or Flying Fish on the Boardwalk.

Tues.: Epcot sounds good to me, but I don't know if you would want to make two trips over to the Beach Club and then back into the park. I would pick one meal for the Beach Club, and then do World Showcase Counter Service for the other. I would probably do Beaches N' Cream, maybe just for ice cream, because you have LOTS of sit down meals.

Weds.: I've never been to Universal and would skip it unless you have been to Disney several times and need a break. I would probably spend some more time at MK or, if you don't want to use a day in the parks, maybe take the monorail around to the resorts or do DTD. Go to Boma for dinner if that's someplace you want to try.

Thurs.: Sounds perfect.

Fri: I'd split between your favorites at MGM and Epcot. Go over to Beaches N' Cream if you haven't already been.

Sat: Sounds perfect. If you've already done the Plaza for lunch, I'd just do counter service--lots of good choices at MK. You have SO MANY sit-down meals. We usually only do 2-3 total in a week.

By the looks of things you are going to be there over a long weekend. The monday at MGM may be busy. If you leave for dinner at Boma are you planing on coming back to MGM for Fantasmic? I think it shows at 7:30pm. You could switch it and have dinner at MGM and then stay for Fantasmic.
Definately go to Universal. It is a real blast and depending on who your with you could even get stay and scream tickets for Halloween Horror Nights on the Wednesday night. Everything looks really good. The Friday is a 10pm night at MK with showings of Spectro and Wishes, and with a historically lower attendace day to boot. Have fun!
