Is it possible to make a 10:30 flight, yes -- if everything goes smoothly and ship arrives on time and is cleared on time. You would just need to be either in the Express Walk-off group (taking all your bags off with you) or in the first group off the ship. You cannot do Onboard Airline Check-in so if you need to check luggage, you need to have time for both check in with the airline and security in Orlando (which can have very long waits; having TSA pre-clearance might help).
But if you book a flight that early, you have to know that there are risks. Even if everything is going smoothly, there is the stress to get out and through customs quickly. I've been on several cruises were disembarkation hasn't started until 8 or later and that would cut into the time you have at the airport. Some people would book a 10:30 flight and be fine with it. If it's the only option for the day, I might do it but I would have a Plan B. Personally, the earliest I would risk it is 11:30 (because then I could at least use Onboard Airline Check-In and remove one line that I had to wait in at the airport).
