Doing annual family trip. First night, a will be in one Disney hotel. Then, on the second day, we check out and then check in to a different Disney hotel for four nights. Can I book four nights of reservations when I hit that 60 day window for the FIRST reservation which is only for one night?

If you're talking ADRs..... You're in H1 the first night, then H2 for nights 2-5? If so, you can make ADRs 60 days in advance for H1. Then you have to wait one day to make the ADRs for the 4-night stay that follows. It's a split stay (unless I'm missing something), and they won't allow ADRs to cross split stays (which is unfortunate, especially since LLMP./LLSP does allow it).

No. ADR booking windows do not acknowledge split stays. Each stay has it's own ADR window.

(This is different from LL windows which do acknowledge split stays and the whole trip can be booked when the first window opens)
