We just purchased a package with the regular dining plan included. We would like a special evening for our anniversary. Can be in or out of the parks. Is it possible to have a really great meal, with ambience, and only use 1 TS credit on the dining plan?

Depending on how you define ambiance, Raglan Road may also be an option. Note that said ambiance is not "romance." But it is ambiance all the same, for a definition of ambiance of "atmosphere." It's got it.

Sanaa is definitely our vote for signature feeling with non-signature classification.

I really like "San Angels Inn" (inside pyramid) at Epcot World Showcase, for the Romantic Feel and I have found to food to be very good (I have tried all of their Seafood dishes).
We've eaten at several Signature Restaurants and I haven't found them to be any better than most of the 1 TS restaurants, just more expensive and more attitude.

Coral Reef is a possibility. I didn't love my entree, but the Bailey's mousse dessert was crazy-good.

I have read reports of wild children there, but our experience was that the atmosphere was very serene, like the water and sea creatures calmed everyone.

in HS, Mama Melrose has great romantic ambiance, like an old fashioned italian restaurant with lots of sparkling twinkle lights hanging from the rafters. I rather like the food there too. You can even do the F! package for 1TS.
in AK there is great theming but I wouldn't say anything has a romantic ambiance.
in MK there is, of course, Be Our Guest for dinner. I think with the castle ambiance and the rose napkins it qualifies. you can even get wine there whereas you can't anywhere else in the MK.
in Epcot there are tons of nice places with ambiance. La Hacienda around Illuminations is supposed to be great but there is no guarantee of a window table. San Angel Inn in the pyramid is very romantic. I agree with Coral Reef as a special meal too... I have always liked the food and the atmosphere is quite special.
at the resorts
A pre-sunset meal at Sanaa sounds good too - the restaurant is beautiful and a window seat has a great view of the animals.
The Wave has good food but I think the ambiance leaves a lot to be desired. It's just very boring and there is not much disney about it.

I haven't eaten more than quick service at disney springs so I can't comment there.

For 1 credit I would suggest SAI in Epcot. I loved the atmosphere, thought that the food was excellent, and foud the service to be excellent.

Sanaa is a lovely option as well. I would use the time to explore the AKL resorts. I have not been to Kidani Village, but AKL is stunning, with plenty of animals to gaze upon and artwork throughout the building.

If you want the Boardwalk area think about Captains Grill in the YC, or Tratorria AL Forno on the Boardwalk. My DD dined at the latter and said it was hands down the best meal outside of Narcoossees on their July trip. After dinner you could enjoy strolling the Boardwalk, and stop for a cocktail or two.

DH and I had an amazing dinner at the Wave on our anniversary trip. There's a review linked under my signature. We ate at Narcoosee's and I liked the Wave better. The food and service was outstanding.

The Wave has a nice quiet ambiance and a lovely menu as well. This filet was so tender it was cut with a butter knife. Any restaurant 1TS in Walt Disney World has the potential to be noisy, but because the Wave is in a resort vs. a park, and does not have characters or antics, it is a nice respite from the madness.

For 1 credit meals, I would go with:
  • Sanaa - Animal Kingdom Lodge - Kidani Village
  • The Wave - Contemporary
  • Grand Floridian Cafe - Grand Floridian
  • Kona Cafe - Polynesian
  • Turf Club - Saratoga Springs
  • Captains Grille - Yachtclub
  • Chefs de France - Epcot
  • Spice Road Table - Epcot
  • Paradiso 37 - Disney Springs
  • Portobello - Disney Springs
  • Chef Art Smith's Homecoming - Disney Springs

Chefs de France always a good choice for Me & DH. Coral Reef is good too.

Only problem with Chefs and Coral reef is that I practically felt like I was sitting with the people at the next table. Also at coral reef we had a seat next to the tank, which you'd think was awesome...it kinda was, but random children would come up to our table, practically climbing over us to see the fish

At the resorts, I would consider O'hana (not romantic, but certainly special and they will acknowledge your anniversary), Trattoria al Forno and Sanaa. Sanaa is very good and is so lovely. Trattoria al Forno is also very good and the entertainment and ambience at the Boardwalk at night is fun. In the parks, I would consider Spice Road Table in EP. The food is really good and the wait staff are incredibly friendly.
