There is a Disney store in the Bull Ring. Follow the signs for the Bull Ring and it is in the half of it on the left as you approach (you use the entrance behind the bull), not the part that has Selfridges in.

Yup, they've got a nice shiney new store in the Bull Ring to replace the tired one in the Pavillions.

There's also one if Solihull now if that helps.
