Butterbeer cupcakes!

My son loved both the regular butterbeer and frozen butterbeer at IOA. Tonite he and his girlfriend made Butterbeer cupcakes. They were delicious! He found the recipe on amybites.com. The only thing he did differently was to make a substitute for buttermilk from a recipe online (milk and lemon juice) and instead of a squeeze bottle he used a small ziploc with a corner snipped off and used a straw to poke holes in the cupcakes.
 
You are welcome damo! The good thing was that they cleaned up the mess they created in the kitchen.

We were just there in June. My sons are older 20 and 22 but they grew up reading the books and love the movies. They were impressed by WWOHP and of course the Butterbeer. My son loves to bake and made a pumpkin pie last week!
 
My wife is on a low carb diet in prep for a wedding. I am SOOOO tempted to make these and eat them in front of her :)

My cruelty knows no limits! :P

Just had one...so delicious! You should probably keep them refrigerated because you do use butter in the frosting. They should think about selling them at IOA...they'd be a big hit!

I made them today. They were very good, the icing is delicious! I do feel that that the cupcake was a little bit dry though. I may tinker with them a little, maybe add more butter to the mix? I'm not sure, but I'll figure it out. I think they were also still a little too warm when I put the ganache in them, but I was too excited to wait LOL
 
I made these today for a Halloween party my dd went to, after taking out one for myself of course.:) The kids devoured them.

My thoughts: they were very good. Loved the cake and frosting but wasn't crazy about the filling. I thought it made the cupcakes allmost wet. The recipe makes twice as much ganache as is needed and probably 1/3 too much frosting. But overall, yuuuum.

it was painted on a wall in the town square of Lynchburg TN, home of Jack Daniels. Which if you haven't been is a weird place, it could be fake, but its exactly as its depicted in all the ads (to my surprise).

LOL, I live about 50 miles from lynchburg.

I agree about the ganache just making the cupcakes wet. I think it needs to be more of a cream filling instead of a runny liquid.

the reason i was astounded by how close it was to the ads is because the Tetley Bitter brewery near me, is a massive technical industrial plant and a far cry from the 'traditional yorkshire bitter' image they try and portray.


and liquid fillings to cupcakes, are a crime.
