Budget Travelers - Plan my 2nd Anniversary

My husband and I are looking to go on a 2nd anniversary in May of 2010. We are open to any ideas but would like to keep it under $2k (and for that to include some or most food, air & lodging). I have gotten some good prices for Riveria Maya in Mexico for 5 nights but nothing is really saying this is the place to me. I would love to take him to London/Dublin as I lived there while in college and it is his dream but the cost of airfare was killing me ($1700 RT Yikes). I would definately like to go outside of the US if possible.

So I am hoping some of my budget traveler DIS Board buddies can come up with something special and unique. It doesn't matter when in May we go, however our anniversary is May 19th, so that would be great if we went that week.

My husband is very adventerous (me depends) and we are both big history buffs. We are looking for somewhere that is romantic and we can recharge and renew, due to our family situation (we have 3 children, 2 of whom have special needs) we NEVER get away just the two of us.

Can anyone help? Please give me as much info as you can, websites etc.

Would you consider a cruise? You should be able to get a great deal on one and I think you should be able to do it for under $2000. If you left form Cape Canaveral you could probably even drive and save money on air.

To price them out, I usually use www.cheapertravel.com. We have been on several and while our favorite is Royal Caribbean, we also like Carnival, Princess and Celebrity.

Have fun planning whatever you decide to do.
 
We have gone on 2 cruises on our last 2 family vacations. I checked some out but mostly the shorter cruises (5 nights or less) but most had the same itin. that we had previously but for my husband there was the been there done that factor about being on a ship.

I appreciate the suggestion though!
 
check virgin atlantic's website for deal to where they fly. We got a good trip to London through them and their prices aren't bad. I also like gotoday.com. We did a really nice to trip to Amsterdam and Paris with them. Also check out frommer's budget traveler magazine. Every month they have a section called 40 top deals. They've got a few deals from each area of the world every month. We've also used the packages the have recommended and loved it.
 

We just did our wedding/honeymoon at a Couples resort in Jamaica and it was heavenly! They have four all-inclusive resorts in Jamaica, and it's great because meals (everything from casual to fine dining), drinks, activities (including several tours off-property), etc. are included. It is a great place to relax and unwind. I would check out this, or other all-inclusives (Couples is a little more sedate than many, but we liked the atmosphere a lot).
