Could anyone advise if vegetarian sausages are available during breakfast?

I've never seen vegetarian sausages on any of the buffets. However, It would not surprise me if most locations offered it upon request. Disney does a great job of accommodating special food request.

No, they don't offer anything like that. You will be directed to items that don't contain meat.
