Bonjour! Who love crepes?

Earlier this summer I had the crazy idea of making a day a week - international day. On that day we eat food from that country and learn a little about that country- like where it is(we get out the globe) learn a couple words and sometimes watch a movie based on that country.

So Today is France! Oh laaa laaa. And breakfast was CREPES! What's not to love about that?
And I got to thinking why don't we have these more often. Really so easy to use up everything in the pantry as a filling.
Today's hits were melted chocolate chips - cream cheese with powdered sugar mixed in, nutella and even jelly.

Do you make crepes? And what do you use for fillings?

I'm thinking of making some savory seafood ones another day for dinner.
 
In Paris, they have these teeny little freestanding crepe stands all over the place. When DH and I wanted a snack or light meal and didn't want something akin to McD's, we would grab a crepe. I usually got a cheese and mushroom one first, followed by either a butter and sugar one or a strawberry one. Mmmmmm....... :love::worship::lovestruc
 
Mmmmmmmmm...both of my sisters are in PAris right now. So jealous. I bet they are having their fill of 'em!
 
Oh I have to try the cheese and mushroom! That's on the list now!

I went to Paris when I was in High School and didn't have a single crepe! I am anxious to try out some other crepe recipes too. The ones we had today were a vanilla based crepe(yummy) but I saw a savory one that I am going to try.
 

When DD and I travelled to France, we could have lived on crepes. Her favorites were with Nutella. I love the butter and sugar ones. Or ham and cheese. On her birthday we ate at a creperie and the group leader asked for crepes with candles so everyone could sing to her. They restaurant didn't have candles but they had a couple of sparklers left from Bastille Day that they used. Made her 17th birthday very special.

I bought my DH a crepe stick in Brittany that he hasn't used yet. One of these days I may have to try making them myself. We watched a great demonstration at the shop where I bought the crepe stick!
 
what's a crepe stick? I'm off to google! Ham and cheese? Never thought of that either. thanks!
 
I love the Jewish version of crepes: blintzes. They are filled with cottage cheese & ricotta mixed with a little powdered sugar & vanilla. Then topped with low-fat sour cream & apple sauce. :)

I've also had a shredded chicken, mushroom & cheese crepe topped with a white sauce.

Hmm, these would be easy to make. :scratchin I actually prefer these to omelettes, which are sometimes too much egg for me.

You might see it called a crepe spreader. It looks kind of like a T and the top part is used to spread the batter evenly in the pan. They also use a special crepe spatula in Brittany that is made of wood. I bought one of those too.

Crepes are DS's favorite food - we have them every two weeks at least!

They are great with:

A thin layer of orange marmalade;

peanut butter and jelly;

hazelnut creme (NOT Nutella);

honey; and

a faux blintz filling - one container large curd cottage cheese, 3 Tbs sugar, one or two egg yolks (yes - raw, YMMV), and a handful of raisins.

I actually have two crepe pans and work them both at once on "crepe night!"

I fell in love with crepes during a visit to Paris! Those crepe stands were just so fantastic!! But, I've not yet managed to find a crepe here in the U.S. that's quite as good. Perhaps it's just the Parisian atmosphere that made them taste better over there. Still searching, though.
 
We heat up some Jam and fill it with fruit as a quickie.

I just need a good recipe for the crepe. Anyone have one?
 
Oh we love crepes!

We llike them with grilled (or rotisserie) chicken, cheese, and tomatoes. We also like them with no meat at all, just the veggies and cheese. They're very good with seafood as well.

Dessert ones are of course awesome. Fruits with ricotta and sugar, or nutella. So very yummy, and yes, very easy. You don't need anything fancy to make them, although we did get a crepe pan, as we have them often.

This is the recipe I use. It came from Southern Living. I keep some in the fridge all the time in a Pampered Chef batter bowl! :goodvibes

1 cup flour
1 1/4 cup milk
2 eggs
2 tablespoons of butter, melted
1/4 teaspoon salt

Whisk together all ingredients and allow to rest for 20 minutes.



I have tried making the crepes when the batter hasn't rested and they aren't as good. I actually usually make the batter at least the night before. :thumbsup2

eta - I use skim milk and egg substitute to make them a bit healthier :)
 
This is the SWEET one I made today and it was GOOD!
INGREDIENTS:
1 1/2 cups milk
3 egg yolks
2 tablespoons vanilla extract
1 1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
5 tablespoons melted butter
DIRECTIONS:
1. In a large bowl, mix together the milk, egg yolks and vanilla. Stir in the flour, sugar, salt and melted butter until well blended.
2. Heat a crepe pan over medium heat until hot. Coat with vegetable oil or cooking spray. Pour about 1/4 cup of batter into the pan and tip to spread the batter to the edges. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden. Repeat with remaining batter.
3. Fill crepes with your favorite fruit, cream, caramel or even ice cream or cheese to serve.
made about 12 BIG crepes.
 
If it weren't for the crepe stands in Paris, my son would have starved! He liked the chocolate. I loved the french country ham and cheese. Tres bien!

ah, dreaming of finding a good ham and cheese crepe in the states...:lovestruc

(I think it's the cheese, different sort of cheese than we have here that makes them so good?!)
