We have dinner planned for Flying Fish. After dinner we would like to walk around the Boardwalk and "possibly" stop at Ample Hills for some ice cream afterward. Should we plan on parking valet? I read that someone else was told 2 1/2 hour parking time limit for non valet parking. I'm pretty sure that would be enough time to eat and then walk around the Boardwalk but I don't want to feel rushed.

I would valet. That way you are not constantly having to check the time or worrying about when to get back.

Last time we were at Disney (11/15) they told us there was a 3 hour time limit but that they didn't enforce this in the evening. It's more to discourage people from parking at BWI to avoid paying for Epcot parking, basically parking all day and evening at BWI for free while going to Epcot. YMMV... maybe ask at the guard gate when you go into park. I'm not sure I'd worry about it too much.

I've parked at the boardwalk in the evening without an ADR. Just told the guard I wanted to look around and we ended up having dinner at the brew pub. There was no mention of a time limit. I was staying on site at a different resort and the scanned my mb. Not sure if that makes any difference.
