We had a great experience using UBER in the parks!

For the first question:You can call for a taxi that has a car seat if you want one. At that time, I would probably do taxi to Poly and then monorail to MK, but if you want to save the $$ and take Disney Transport, bus to MK, monorail to Poly.
For the second person: I'd leave around 7:45 for a 9am ADR
