Best uses for FETA cheese?

I have a ton of Feta Cheese that I need to use up. What are your best uses/recipes for using Feta?

I've used it in mashed potatos before, it was pretty tasty. Also good on tomato, cucumber, and red onion salad with a little bit of red wine vinegar and olive oil.
 
I love it in salads.
also spinach feta pies ( or you can do like a hot pocket, using refrigerated rolls or pizza dough )
 

I sprinkle feta on my salad!
 
Spinach sauted in garlic and olive oil (a little salt and pepper), and feta cheese folded in (after removed from heat.

I usually use that mixture as a stuffing for chicken breasts, but it also makes a good side dish.
 
Make Tiropita or Spankitopita - you can probably find recipes if you google it but it's Filo dough layered with melted butter and folded into triangles with the filling in the center - similar to folding a flag. For the filling you mix the Feta with an egg and some oregano and for the Spankitopita add chopped spinach. Bake until crispy - yum!!! These can be frozen before baking and make great appetizers.

Also Feta is yummy over pasta and shrimp with sundried tomatoes, oregano and olive oil.
 
I make a cold orzo pasta salad that gets rave reviews that hase Feta Cheese in it.

I cook the orzo then mix in thawed green peas, and feta cheese.

Then I make a homemade lemon and basil vinagrette that I pour over and stir in. Take about 2 lemons and a cup or more of basil. Hard to say....I don't measure.....
 
I make a darn good fettuccini with it. Cook some fettuccini noodles and drain. Toss with lots of olive oil, sun dried tomatoes cut into small bits and lots of crumbled feta cheese.
It's soooooooooo good! LOL
 
Mmm, what *cant* you put feta in.:goodvibes I like it in omelettes, in rice & spinach casserole, on salads, on pizza, on steak. I once brought DH back from the dead(so to speak!) with fresh feta cheese. 'Course, he's Greek and I think it's one of the 4 basic food groups--baklava, chicken, tomatoes, and FETA.
 
We eat feta with many things, but one of our favorites is feta turkey burgers. Just mix the feta into your ground turkey meat and cook.
 
I like it in pasta salad, with tons of veggies - broccoli, peppers, cucumbers, red onion,olives, anything else on hand, tossed with newman's italian salad dressing.

Top a pizza with some chopped spinach and garlic and chicken and feta

Top a pizza with chopped onion, feta, chicken, and sun dried tomatoes

as an omelette (scramble eggs or egg whites with some oregano, and cook like an omelette, and fill it with chopped tomatoes and feta.
 
Ellie Krieger from the Food network has a good recipe.
Ingredients
1 tablespoon olive oil
1 medium onion, diced (about 1 1/2 cups)
2 cloves garlic, minced (about 2 teaspoons)
2 (14.5-ounce) cans of no-salt-added diced tomatoes, with their juices
1/4 cup finely minced fresh flat-leaf parsley
1 tablespoon finely minced fresh dill
1 1/4 pounds medium shrimp, peeled and deveined
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2/3 cup crumbled feta cheese (about 3 ounces)
Directions
Preheat the oven to 425 degrees F.


Heat the oil in an oven proof skillet over a medium-high heat. Add the onion and cook, stirring, until softened, about 3 minutes, then add the garlic and cook for 1 minute. Add the tomatoes and bring to a boil. Reduce the heat to medium-low and let simmer for about 5 minutes, until the tomato juices thicken.


Remove from the heat. Stir in the parsley, dill, and shrimp and season with salt and pepper. Sprinkle the feta over the top. Bake until the shrimp are cooked through and cheese melts, about 12 minutes.

I love feta on pizzas as well. What is delicious is to use pesto as the sauce, rather than tomato based, and you have an amazing base.
 
Baked feta.. mix some feta with minced garlic, olive oil, salt and pepper. Wrap it up in tinfoil and bake it until it's all ooey and melty. Serve with pita chips.. it's nummy!
