My favorites are shortcakes & a couple casseroles. I don't know if the box still has the "Impossible Pie" recipes on it, but I like those too. Of course they all have cheese in them. I wouldn't say it's my "favorite", but I use it to make pancakes also. Oh - and if I'm low on potatoes when I make beef stew I'll use it to make dumplings for the top. DS loves those, but having them once every 2 yrs is about right for me.

Oh - and again it's a dessert, but that pumpkin job recipe we all talk about uses Bisquick & is made in the crockpot. Do you need recipes?
I've never understood people who like "shortcake" that's spongey...like angel food cake. I prefer the Bisquick kind, warm with fruit and milk on them. Yum! Right now we're having strawberry shortcake, but we do it all summer with peaches, raspberries, blueberries...
[ETA: I don't make them in an 8x8 pan though. I make individual ones on a baking sheet. Either the Bisquick or Jiffy Mix recipes says to knead the dough, but I don't do that either. I just mix it with a spoon & then drop directly onto the baking sheet. It works fine for use. If you want them smoother looking you can just mold them in your hands briefly, but I don't even bother with that anymore. With me, it's all about quick & simple!
Oh - and it may sound gross or weird, but instead of "melted shortening" I use olive oil. We use extra virgin olive oil that doesn't have that olive taste. I use it in almost everything that calls for butter.]
Shortcakes
2 c Jiffy Mix or Bisquick
2 Tbl sugar
3 Tbl melted shortening (I use olive oil)
½ c milk
Combine ingredients into soft dough. Turn onto surface dusted with Baking Mix & knead quickly 20 times. Pat or roll ½” thick. Cut with 3” floured cutter. Bake on ungreased sheet at 450 for 8 – 10 minutes. Yield: 6 shortcakes
Meat shortcakes should have the sugar eliminated from this recipe.
Impossible Breakfast Pie
6 Eggs
2 cup Milk
1 ts Dry mustard
1 cup Bisquick
1/2 ts Oregano leaves
1 lb Sausage
1 cup Cheese, cheddar, shredded
Method:
Brown and drain sausage. Mix all ingredients together and cover.
Refrigerate overnight.
Preheat oven to 350. Pour into greased 2-qt. casserole; bake until knife
inserted in center comes out clean, about 1 hour.
Impossible Taco Bake
1 lb shredded chicken
1 env taco seasoning mix
1 can tomato soup
1 can refried beans
2 c shredded Cheddar
2 c baking mix (like Jiffy or Bisquick)
1 c milk
2 eggs
1 tsp chili powder
Heat oven to 350. Into an ungreased 13x9 baking dish, put the chicken & beans. Stir in taco seasoning mix, tomato soup & beans. Cover with cheese. Combine baking mix, milk, eggs & chili powder & stir until blended. Pour over chicken mixture. Bake 35 min or until light golden brown.
[NOTE: The original recipe says to serve with sour cream, chopped tomato & shredded lettuce, but I forgot to do that. DH requested that I put corn in next time. I was also thinking of using corn muffin mix next time instead of the baking mix.]
Pumpkin Job
16 oz pumpkin
2½ tsp pumpkin pie spice
2 tsp vanilla
1 can evaporated milk
¾ c sugar
½ c Bisquick
2 Tbl margarine
2 eggs
Spray crockery with non-stick spray. Beat ingredients together until smooth with a hand mixer. Pour into crockery. Cook on Low 6-8 hours, High 3-4 hours. Top with cool whip or ice cream. Optional: add 2 apples sliced. Serves 6
