Best Resort for Adult Friends Trip

We are planning a weekend in February for 3 couples. We have stayed at WBC before and loved it, but I'm wondering what other resorts are out there that are similar? We are looking for somewhere that has fun bars/restaurants and a few things to do in case it's too cold to just hang by the pool. We probably won't go to the parks, but will most likely hit up Disney Springs or City Walk. While on that topic, we've also never been to City Walk. How does it compare to Disney Springs? Thanks!!

City Walk less stores and maybe smaller but alot of restaurants.

Double Tree Universal

Disney Springs Hotels
Double Tree Disney Springs
Hilton Disney Springs
Hilton Palace Disney Spring

I would recommend Boardwalk area at Disney
Swolphin, Beach Club, Boardwalk resort
and then just go to Epcot for the Food and Wine

I recommend Swan with access to the Boardwalk. or Saratoga Springs resort with walking distance to Disney Springs.
