Best places to eat for a light meal

We like meals which are healthier and not heavy which make you feel like you had a Thanksgiving meal, such as buffets (DH always eats too much and wants to try everything)

We like The Plaza in MK for sandwiches

Other suggestions ?

May sound silly but we like to order the kids meals even though we are seniors. Counter service doesn't know (or care) who you are ordering for. Since portions are smaller, there is less guilt if you eat chicken nuggets. Most kids meals come with fruit or vegetable which are good for you. Just an idea to not feel stuffed.
 
We like to enjoy the atmosphere at a TS but we order a few appetizers to share. One of our best, fairly inexpensive meals was a few appetizers at Marrakesh and we honestly could have gotten just two they were so big. At Skipper Canteen we've done appetizers as meals. California Grill with appetizers and drinks was one of our least expensive and we got the fireworks view to go with it.
 
We second the kid meal idea. Often we would like something light, and not bulk up on french fries, etc. that accompany a lot of the counter service meals, so we'll go for a kid meal and feel fueled up and satisfied.
 

I've heard great, recent reviews of the apps at San Angel in Epcot. Gorgeous atmosphere.
Cobb Salad at Hollywood Studio's Brown Derby is a great, classic app lunch choice for light eaters.
Yak & Yeti at AK has incredible apps. I've enjoyed the Dim Sum, Lettuce Cups & Wok Fried Green Beans. Others love the Ahi Tuna Nachos.
 
As others mentioned above, we get soup and salad at HBD. We also go to San Angel Inn for the apps. Not sure where you are staying, but Captains Grill in the YC has a great lunch with a soup and half of a sandwich combo. Very delicious and reasonably priced. We also enjoy Columbia Harbor House where you can get a sandwich or fish. Also, Via Napoli has a wonderful fresh salad you can share with a small pizza.
 
I like the China Island Salad or whatever it is called at the AK Rainforest Cafe.
 
We like the tuna nicoise at Les Halles. It's pretty big, so we usually get that and maybe a croissant or small baguette and share it. We also do this at Kringla Bakery - share the salmon salad or the salmon bagel (it's huge!). Some QS (like Sunshine Seasons) have some grab and go items which are smaller (I had tuna on a wheat croissant - also shared with DS!) and pretty reasonably priced compared to getting a full QS meal.

I've done the same thing at LH, or added the Lobster Bisque and that's plenty for 2 to share and really reasonable.
