We are from KC area (guessing you are too?) and Hilton Head is one of my FAVORITE places on earth! We just got back from a week there and have gone about every other year for the past 15 years. Never have stayed at the Disney resort and not sure I would...simply because the actual resort is on the wrong side of the island from the beach(it is in the Marina area) and you would have to take a shuttle across the main road about a mile to their beach house area whenever you wanted beach time. Their resort is located in one of the entertainment/shopping areas but I am just one who would rather drive for that stuff and not have to transport all of my sandy beach stuff very far. There are SO many choices on the beach or within a short walk that the Disney property has just never been on my list.
As far as other stuff...the Hilton Head beach is beautiful and rarely crowded. The restaurants and numerous and very yummy! We never had a wait for a table last month either and we were usually eating between 6-8pm. There is free live entertainment somewhere basically every evening that my kids loved. We did dolphin spotting cruises and a few programs through the Coastal Discovery Museum as well.
We love Hilton Head...you fly into Savannah and drive about 45 min to get there.
