Best place to chill out an have a beer.

So, I'm a bit spoiled. My Wife and I did a solo trip this fall mostly for Food and Wine. Without our son along, it allowed us to chill out and enjoy and adult beverage or two and various settings.
We liked the dawa bar and Nomad lounge in Animal kingdom and of course we enjoyed hanging out around the world showcase in epcot during F&W.
I like craft beer, but my wife not so much. She'll opt for a margarita or something.

Where is your favorite place to chill out, have a drink and maybe a snack?

We'll be there at the end of February, along with our 10 year old son who is bit of disney veteran. He's now old enough to chill out a bit with his folks, but obviously he'd rather be hitting rides if he could.
Where would you hang out in order to enjoy yourself, but not bore your 10 year old to tears?
 
I was ready to say the benches in Germany; beer and pretzel, every trip, at least twice. But then I read the part about not boring your son to tears. If the model trains are running, then that could still work for a bit. Otherwise, I'd say your best bet is to time your chill time with some outdoor performers in one of the countries. They can entertain your son while you guys chill on the side.
 
Our favorites in the parks:
AK Nomad Lounge, not a fan so much for Dawa bar.
HS Baseline Tap House
Epcot - too many to list, but really enjoy Tutto Gusto Italy

Resorts: Victoria Falls AKL, Abracadabar Boardwalk,Misners GF, Trader Sams Poly.
 
Pretty much any lounge in a deluxe resort would be good. I have heard a lot about Trader Sams at the Poly, but haven't made it over there. The new Tap House at HS looks pretty interesting. Some of the TS have a nice lounge area for a drink too and you don't need a ADR to go there. In HS for example you could go to 50s Prime Time or Brown Derby and have a drink.
 

Either patio, to the right or left of the Rose&Crown and inside the R&C, up the hill at the CS dining area to the left of Japan but our fave is the 2nd floor balcony of the Belle Vue Lounge at Board Walk, after 5 pm, Allen makes a great spicy Bloody Mary.

Baseline for sure. Geyser Point at WL. Trader Sams at Poly -w/son might need to sit at patio if later in the day, where they do offer music but lose the atmosphere. ESPN ..good food/atmosphere.
 
I enjoy the Victoria Falls lounge at Animal Kingdom Hotel. There’s a ton of activities for children there. If you feel it is age appropriate for your child he could even wander a bit on his own looking at the animals.

It’s open on a mezzanine level so from the main level he could most likely look down and see where you were.

You like craft beer and she likes margaritas? Try Baseline Tap Room at DHS. I had a great margarita and DH had a flight there on our October trip. We stopped there twice for drinks and a pretzel. You can sit outside so there's enough action around that may keep a 10 year old entertained. We saw some characters go by as we were sitting there people watching.

We also like Trader Sam's at Poly and a 10 year old would no doubt stay entertained there. The only downside is that there is often a wait to get in there, unless you go when they open at 4pm. If you do that, show up around 3:30-3:45 to ensure you'll get a seat.

We tried twice to get into the Tune In Lounge at 50s Prime Time at DHS, but to no avail. It seems always busy and both times it was chaotic, since its adjacent to the waiting area for the restaurant.
 
Jock Lindsay’s Hangar Bar in DS is great. Sit outside to look out over the water. Heaven.

Personally ( my plan )I’d order alcohol to my room using a grocery delivery service and would chill poolside..

My favorites were Baseline Taphouse, Brown Derby Lounge, and benches around the World Showcase. I’d sit near the country “entrances” and enjoy a drink while my kids explored the country doing the Agent P missions.

Forgot to mention my son love's Jock Lindsey's. It's a little easier to get him to relax a bit, when there aren't roller coasters nearby.
We are staying at Animal Kingdom lodge, so Victoria Falls will be experienced for sure.
This will be our first vacation where we have a "down day". Mid vacation we'll be hanging out pool side for most of the daylight hours and Disney springs in the evening.
We usually do disney spring on the first day as we arrive late afternoon, but we are changing it up.

We did Baseline Taphouse as well on a previous trip, and that is very much on the list.

Whoa, this is an option? Which grocery services will deliver alcohol? That would save us a lot at the pool!
 
Jock's at Disney Springs for sure. Its a fav of my wife and I. Victoria Falls is nice but the overall vibe and atmosphere at AKL is amazing anyway. I havent experience too many bars/lounges but I was NOT impressed with the lounges at Riverside or French Quarter. The Edison has a cool atmosphere and really neat drinks however they are expensive ($14 a pop) and a little underwhelming on the alcohol.

I’ve never paid much attention but now divorced 4 kids this mama needs wine every now and then ha ha ha

Since you are staying at AKL you could also venture over to Sanaa at Kidani. I like their lounge and the African beer they have.
 
Also enjoyed Baseline! Great beer selection and wonderful warm pretzels with cheddar beer dip!

Sorry, I'm not a craft beer person.

But I have enjoyed many very cold American-style lagers at ESPN Zone on the Boardwalk to accompany a mound of nachos.

On the other hand, Josh, @ EasyWDW, does enjoy good beer. His review of BaseLine TapHouse:

My advice: first stop at 50's Prime Time so your wife can enjoy a hand-made margarita to-go before stopping to enjoy one of those craft beers at BaseLine.
