Best parks for short solo trip?

I will be in Orlando at the end of May for a Critical Care Nurse National Teaching Institute and will end my time there with a one night, 2 day trip to WDW. Looking for the best two parks to do solo. I was thinking of Epcot and Animal Kingdom as there is alot I have not seen in those two parks as DH is not a fan of AK, and the kids are not fans of World Showcase, but then I also love MK, but Big Thunder Mountain is not to open til 2 days after I am there. Decisions, Decisions.

As an adult going solo, I would recommend those two parks. The only reason to add MGM is if you are a movie buff. You can never go wrong on going to MK at any time. How about 1/2 day at MK and 1/2 day at AK (doing those things you have never done before).

I'd suggest at least spending some of the time at MK. However, I can see your point about going to AK since your DH doesn't like it. I'd suggest doing a morning at MK, a night at Epcot, and the next morning at Epcot, if that's possible for your schedule.
