Disney is out because it's around Christmas and the value resorts are expensive. I figured it's best to stay near port canaveral and maybe spend a few hours walking around or at least having dinner.
What's close to port but also within walking distance of the hotel. (no rental car). Bonus if the hotel has a shuttle to port?

There aren't any hotels that you can walk to the port from. However, most have shuttles (for a fee).

How are you getting from MCO to PC? You might want to rent a car. I'm not sure if any hotel has a free shuttle from the airport. Plus there is a per person fee to use the hotel shuttle to port (most hotels). A rental may be the cheaper alternative.

I was going to uber from MCO. I didn't think renting a car made sense because of paying to park it for a week. Or is there somewhere to give back the rental at PC and then rent it again on the way back?

We are staying at the Hilton Cocoa Beach. It is DCL hotel. It is about a 10 minute drive to the ship.

What does DCL hotel mean? I just looked at the website and it doesn't mention a shuttle or anything. Please explain.

It is one of the hotels you can book through DCL and listed as a pre/post cruise hotel. I have not stayed at this particular hotel but every other DCL pre/post hotel has DCL staff on site. They will pick up your luggage and transport it to the ship as well as provide transfers to the ship from the hotel if you wish. You need to contact DCL (800-951-3532) and book your stay.

The car rental agencies by Port Canaveral provide free shuttles to and from the cruise port. You may have to wait for the shuttles and to pick up a car, especially if several ships are docked that day, but you certainly can return a car before your cruise and rent a car after your cruise. There is enough traffic between the Orlando airport and Port Canaveral that a one-way rental shouldn’t be a problem.
