Best day to go to parks?

We are taking our first trip to WDW last week of December. Can anyone tell me which days are best to go to (or not go to) each park. The only thing I have heard is not to go to MK on Mondays. I won't be there during a weekend.

If you are staying on WDW property, the Extra Magic Hour days are:

REGULAR DAILY SCHEDULE

Sunday - Magic Kingdom
Monday - Animal Kingdom
Tuesday - Disney-MGM Studios
Wednesday - Epcot
Thursday - Magic Kingdom
Friday - Animal Kingdom
Saturday - Disney-MGM Studios

We like to get to those parks before opening on those days & get a good hour of rides in. Some people totally avoid the EMH parks on their scheduled day, which I think works to my advantage!
