You have a limited number of buffet options without characters for breakfast.
Trail's End
The Wave
Captain's Grille
Boma
Given that Boma is at AKL, The Wave is at the Contemporary, Trail's End is at FW and CG is at Yacht Club, they all have merits depending on where you're starting from.
Boma...
They have far more choices than the Wave and Captain's Grille (although they are both excellent) and more unique items, as well as traditional breakfast items.
Trails End is my least favorite breakfast in all of WDW. Imho
Hmmm, I think they taste like sweet potato flavored pancakes (more dense and more flavorful). They are on the buffet, so if getting the buffet, you can have a taste of them and try other things as well if you don't love them.

Dh will definitely be having the buffet-I'm more likely to choose from the menu...
However- I think a little nibble of one of his sweet potato pancakes could be happening
I really am not a big fan of buffets for lunch/dinner, but when it comes to breakfast buffets I am a bit less demanding. My favorites in order are:
Boma: Just wish it wasn't such a pain to get to early in the morning.
The Wave: What a pleasant surprise for me. Tried it on a whim last year and enjoyed it. We ended up booking another ADR there for our departure day. I"m almost willing to rank this as a tie with Boma.
Captains Grille: Another pleasant surprise and very good.
I have to say Boma is our fav, then the Wave. We also love going to Rainforrest Cafe for breakfast, but it isnt a buffet. We really like the vibe and I can split the breakfast omlete three ways when my parents join us. It is huge.
I am a big fan of Boma for either breakfast or dinner. It is located in a great resort and the food was incredible every time we go there. This is one of the few places I can go to every trip and never get sick of it.
I had breakfast at The Wave a couple of weeks ago and loved it! They have a buffet, or you can order off the menu. I went with the buffet. Be sure you try the sweet potato pancakes with honey pecan butter!
I ate at Captain's Grille multiple times in 2012, too, and enjoyed that as well - same idea as The Wave, buffet and menu options.
