Beet Bundt Cake

1 cup butter or margarine -- divided
1 1/2 cups packed dark brown sugar
3 eggs
4 squares semisweet chocolate (1-oz. each)
2 cups pureed cooked beets
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
Confectioners' sugar
In a mixing bowl, cream 3/4 cup butter and brown sugar. Add eggs; mix
well. Melt chocolate with remaining butter; stir until smooth. Cool
slightly. Blend chocolate mixture, beets and vanilla into the creamed
mixture (mixture will appear separated). Combine flour, baking soda
and
salt; add to the creamed mixture and mix well.
Pour into a greased and floured 10-inch fluted tube pan. Bake at 375
F.
for 45-55 minutes or until a toothpick inserted near center comes out
clean. Cool in pan 10 minutes before removing to a wire rack. Cool
completely. Before serving, dust with confectioners' sugar.

Garden Patch Cake

1 cup vegetable oil
3 eggs
1 1/2 cups sugar
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1 cup finely shredded zucchini
1/2 cup finely shredded beets
1 1/2 cups semisweet chocolate chips
Frosting
6 ounces cream cheese
1/2 cup butter or margarine -- softened
2 teaspoons vanilla extract
4 1/2 cups powdered sugar
In a large bowl, beat oil, eggs, sugar and vanilla. Combine dry ingredients; add to egg mixture and mix well. Stir in vegetables. Add chocolate chips and mix well. Pour into a greased and floured 13x9" baking pan. Bake at 350 degrees for 35-40 min. or tests done.
For frosting: beat cream cheese, butter and vanilla until light and fluffy. Gradually beat in powdered sugar until smooth. Spread over cooled cake. Store in refrigerator.
