We have a stay booked at the DLH followed by the GC with theme park view. We are a party of 4 adults. Do I need to request a room at each resort that sleeps 5 if we don't all want to share beds?
You could book for 5 adults. At DLH, you should also request 2 Queens and a Daybed (or sleeper chair). There are many rooms with this configuration. Rollaway beds are also available at DLH.
As the PP noted, the GCH only has 2 Queens with a Daybed at the front of the hotel. There are only 39 all classified as Standard View, so upgrading to Theme Park View means you will not receive a Daybed. Rollaway beds do exist at GCH, but might not actually "roll". The rollaway seemed permanent, creating a room with 2 Queens and a Single.
Were you able to specifically book Theme Park View? Park and Pool views have been grouped together as Premium View, at least online.
At the GCH, in the 2 queen rooms, there really isn't enough room for a roll away. We usually bring an air mattress and my daughter usually ends up half way under a table. (She hates to share a bed.)

I agree with you, but at least one room does have a rollaway bed. I say "at least one", since perhaps it is the only one. There was a post about a rollaway bed in March 2015, and some friends received the same room (4446) in December 2015. They were booked for 5 adults, but did not need the extra bed (so it became a luggage stand).
I did not take any pictures (it was night when I visited), but 4446 has a nice view of Grizzly Peak.

When booking online, Premium is currently the top view type which can be either Park or Pool View.
Park and Pool were once separate booking categories, so it might be possible to book they over the phone. You might want to call the hotel for clarification, and to specifically request a Park view.
