Does anyone have a easy bean soup receipe. I have this nice ham bone left from christmas and want to do something with it.

Lentil Soup

1 ham bone/butt
1 pkg dry lentils
6 c water (I never measure)
2 carrots
1 tsp crushed/minced garlic
1½ c tomato or V8 juice
½ c minced parsley
1 Tbl margarine
1½ tsp salt (opt)
dash pepper
½ tsp dried oregano
1 Tbl wine vinegar

Boil the bone/butt for an hour or so until you have a good stock. Remove the bone/butt, cool & dice the meat. Clean the lentils & bring to a boil with the water, carrots, garlic, parsley, margarine & seasonings. Reduce heat & simmer until carrots are tender. Add the juice & meat, then check seasonings. Use the hand blender until most of the lentils are broken. Serve with a Tablespoon of wine vinegar in each bowl.

The other thing I do with the ham bone is to cover it with water, bring to a boil & then reduce heat to simmer for a couple hours. Remove the bone & cool. Add green beans (fresh or frozen, but not French cut) and a couple potatoes. Bring to a boil & cook until tender. Pull any loose meat off the bone & return to the pot along with any other ham you have left. We eat this as a meal, but if you only have the bone & not enough meat for a meal, the beans are great as a side with other meals. (I skip the potatoes then though.)
 
I have some in the crock pot now and here is what I do:

1 lb Navy or Great Northern (White) Beans (Soak Overnight & Rinse in the morning)

Put in Crock Pot and cover with water (I put the water about 1.5 inches above the beans)

2 Hamhocks or a Nice Ham bone with Cubed Ham

1/2 cup diced onion
1/2 cup diced celery
2 Bayleaves
Soup Base or Bullion Cubes ( I put 2)
1 Cup Chopped Carrots
1 15 oz. Diced Tomatoes

Salt and Pepper to Taste

Cook on Low for 8 hours or so! Debone Hamhocks or Ham bone and discard bayleaves. I use potato masher at the end to mash some of the beans to give it a "Creamy" sort of consistancy! I Serve with Cornbread!
