I am confused as to how be our guest works. Is lunch and breakfast a QS, but dinner is table service?
If lunch is QS why do they offer ADRs?
I have heard people say they wait in a corner for a table to even find a seat. How does that happen if they require ADRs for the QS
 
Yes it is QS for breakfast and Lunch. It works like this: you make a reservation and then you have the option of pre-order via the app or order when they call you. The reason you need a reservation is due to the popularity of the place. It's just THAT popular.
Then you get your rose (indicator for them to bring you your food) and find a table. If there are no tables (and the place is huge keep in mind) then you wait for one. There are 3 rooms to pick a table. You may not get a table in the room you want so some people may choose to wait for a table in a particular room. We went a a normal lunch hour and had no problems getting a table (why we needed a reservation so there are empty tables).
When you find a seat, you then place your rose on the table. Get your drinks if you ordered them (there are drink stations in each room) and then they deliver your food to your table.
It's all a supply and demand thing.
 
Agree with PP. If they're waiting in a corner for a table, then they either don't know there are other rooms or they want to eat in a particular room.
 
The ADRs for breakfast and lunch are not by table size. They are by restaurant capacity. So when a party of 2 take a 4-top, or a large party show, it can make seating challenging.
 

Just to note: You check-in to the left of the queue to the restaurant. We advanced ordered so we were given a yellow rose at check in. There are two lines into the restaurant. Advance order for one, non advance for the other. With our yellow rose we entered the restaurant right away and waited about ten minutes to pay. The other line was about 50 deep waiting in the sun just to get into the restaurant. btw: this was a 1:15 reservation.
