Anyone have a tried and true recipe?? I probably could get the recipe anywhere, in fact there is one for a fat-free one in Southern Living but I don't care if it's fat-free:D I always get good feed-back from DISers:D
 
This is one that has been passed down for several generations in our family. It is a little more time consuming as the pudding you make. Here it is:

3/4 cup sugar
3 tbsp all purpose flour
4 eggs
2 cups milk
1/2 tsp. vanilla
box of vanilla wafers
bananas

Combine 1/2 cup sugar and flour. Mix in 1 whole egg and 3 egg yolks (Save egg whites for topping). Stir in milk and cook on low heat until thickened. Remove from heat and add vanilla. Layer wafer and sliced bananas. Pour pudding over wafers and bananas. Beat 3 egg whites adding 1/4 cup sugar. Pile on pudding. Bake at 425 degrees until top is slightly brown.

I have used the recipe on the side of the Nilla wafers box for years. It hasn't failed me yet.
 
I saw that one in SL and want to try it.

Here's the one I use:

1/2 cup sugar
2 TB flour
Dash salt
1 3/4 C milk
1 egg
1 tsp vanilla
2 TB butter
Vanilla wafers
2 bananas

Mix sugar, flour and salt in top of double boiler. Measure milk and add enough milk to moisten the mixture. With whisk, beat in egg. Turn heat to med high, adding the rest of milk gradually. Stir constantly with wooden spoon. Cook until sauce thickens and boils. Take off stove. Add vanilla and butter. Put lid on boiler while butter melts. In a deep ovenproof bowl, put one layer of vanilla wafers and one layer of sliced bananas. After the butter has melted, stir custard carefully, and spoon the custard (does not need to be cooled) over the bananas. Continue alternating layers until all are used; top the pudding with a layer of vanilla wafers.

Meringue:

4 egg whites at room temperature
1/4 tsp cream of tartar
1/4 tsp salt
1 cup sugar

In large bowl, let egg whites warm to room temp. At high speed, beat whites with cream of tartar and salt just until very soft peaks form when beaters are slowly raised. Gradually beat in sugar, 2 tbsp at a time, beating well after each addition. Continue beating until stiff peaks form. Meringue should be shiny and moist.

Cover pudding with meringue and bake at 275 deg F. until peaks are lightly browned. Cool and serve.
 

The one on the side of the 'Nilla Wafers box is a great one. My mom used to make it alot.
 
Here is a little variation and very easy. Make the pudding as directions state, but with about a third less milk. After mixing well add 1 small container of cool whip and 1 cup of sour cream. Layer wafers and bananas and then pour pudding mixture over. It's wonderful and much smoother than just having the pudding. My grandmother has been making it this way for years. Enjoy.
