Bakers: Cinnamon roll recipe question?

So I was surfing around looking for a recipe to try for Cinnamon roll/buns. I ran across this one that calls for mashed potatoes :scared1:

Has anyone heard of using mashed potatoes in a bread dough?

Does it change the flavor?

Ingredients

Rolls:
1 cup mashed potatoes
1 cup reserved potato water
3/4 cup butter OR margarine
3/4 cup sugar
2 teaspoons salt
1 cup hot water
2 envelopes Fleishmann's® Active Dry Yeast
1/2 cup warm water (100 to 110 degrees F)
2 eggs
8 1/2 cups all-purpose flour, or more if needed

We have a potato roll recipe in our family-usually made at Thanksgiving because turkey sandwiches on these after are REALLY good. The rolls are slightly sweeter then just a plain roll so I could see where they might make a good cinnamon roll. They are heavier/denser then most dinner rolls though.
 
I haven't made cinnamon rolls with a potato bread dough, but it should work fine. generally potato breads are more moist than typical doughs. It is a fairly common bread type.
 
Yummmmm, cinnamon... love it in everything, must be something in the air because I just made myself a treat I never ever let myself have because it's just too yummy to be allowed. Pepperidge farms cinnamon raisin toast with butter and cinnamon sugar on top.

I am curious how your recipe quest turns out. I have never had a home-made one as good as from a bakery so I don't even try any more... mine are always too dry. Could be the potato keeps it moist, I know potato rolls are very, very good.

FYI, if it doesn't work out CiCi's has the best Cinnamon buns ever, the kids have been begging so I am bringing them there today after school.

LOL. CiCi's it is. I'm not a big "bread" dough baker basically because I don't have a bread machine and I always take one look at the "knead, rise, knead" part of the instructions and then run for cinnabons.

We're supposed to get a lot of rain here Sunday so I was tempted to give it a wack.
 
You are absolutely right. Whenever I watch those cooking shows guys like Alton Brown & Tyler Florence start talking about kneading it too much so that the "something" breaks down too much and makes it gummy which make me think ummmm, more info please. At that point my eyes usually glaze over which means it's time to grab my keys and buy whatever it is I want from someone who knows where the elusive baking point of no return happens to lie.

Anyway if you are looking for something neat to do on a rainy day and the cinnamon buns don't work out I do have an idea. Taste of Home just came out with a cupcake decorating issue, the cover of the mini sized recipe magazine had little yellow chicks on it which look adorable, if you go to the shop taste of home website its item # 50063. I've been thinking of making some box mix cupcakes with my daughter this weekend then decorate like these chicks & some bunnies:goodvibes
 
There was a baker on one of the morning shows a few weeks ago (maybe Regis & Kelly???) that made them with the potatoes...I remember thinking that it was a weird ingredient...he claimed it made a flakier pastry.
I'd love to know if they work out.
 
Just my suggestion, but check out the Pioneer Woman's recipe for cinnamon rolls. They are hands down my favorite EVER! They are moist, gooey, and best of all, EASY! I found them a couple of years ago, and now they are my go-to comfort food.

Go to the cooking part of her blog (thepioneerwoman.com) and search cinnamon roll 101. She gives step-by-step instructions with pictures. I do find, that her recipe makes too many, so I halve her recipe. The maple icing is just the perfect way to top them!
 
You can also make easy cinnamon rolls using Rhodes frozen bread dough so you can avoid all the kneading.

I usually let my stand mixer do the kneading when I'm making them from scratch.
 
I friend of mine makes them with potato flakes and they do turn out really flakey and are very tasty!
 
As a yeast dough, potatoes add starch which will make the dough fluffier.

Potatoes also incorporate flavorings very well.
