Many many moons ago.. I tried to make an avocado dip.. i remember it to be so so....

does anyone have a yummy avocado dip recipe...? I have some ripe avocados sitting on the counter and have company coming over sooooooo...

Creamy Lime Avacado Dip

1 ripe avocado
1 tablespoon freshly squeezed lime juice
1/2 teaspoon hot pepper sauce
1 garlic clove, finely chopped
salt & freshly ground black pepper

1Peel, dice and de-pit avocado and place in a food processor.
2Add lime juice, hot pepper sauce and garlic.
3Process until smooth and then season with salt and pepper.
4Transfer to a bowl and cover by placing plastic wrap DIRECTLY onto the surface of avocado mixture.
5Refrigerate until serving.
6To serve, you can serve it as is or add some of the optional toppings and serve with tortilla chips or crackers.
 
I would just make a basic guacamole with them.

Mash them up and add some diced onions lemon juice and salt and pepper to taste.

It is so good that way with tortilla chips or in tacos or even on a sandwich or burger.

Oh and save the seeds because if you put them in any leftover and seal it tight they help it from turning brown.

thanks for the speedy response ! . but can I skip the hot pepper sauce and some of the garlic ?? some of my guests are not into spicey foods or anything peppery related....( me, i love the stuff !)
 

I'd just make regular guacamole. Dice the avocados into chunks, mix with a small diced red onion, one clove of garlic, a tablespoon of chopped cilantro, juice from a lime, and salt & pepper to taste. Mix well and serve with tortilla chips (I serve them with blue corn tortilla chips, awesome contrasting colors.)

Edited to add: I also put in a few dashes of hot sauce (like tobasco or Crystal). we like it tangy.
 
If you don't want a spicy guacamole, try this recipe, modified from an Alton Brown recipe:

4 Haas avocados, halved, seeded and peeled
1 lime, juiced
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 small tomatoes, seeded and diced
1 clove garlic, minced

In a large bowl, mash the avocado with the lime juice. Add the rest of the ingredients except for the garlic and tomatoes. Stir in the garlic and tomatoes. Adjust seasonings.

This is not hot or too spicy.
 
The secret to my guacamole is:
Worcestershire sauce! Just splash!

This is pretty much what we do but we add tomatoes.
 
I just smash them up add some salsa, dash of lime a little garlic powder.

Sure...you can taste it as you go and add to taste. Personally I like a little kick. ;)
 
I mash up the avocados with some salt, pepper, chopped, pickled jalapenos, some of the jalapeno juice, a little lime juice, some cilantro, and, if I have it, some tomato. Then mix in a small amount of sour cream to get it creamy.

Soooooooooooooooo good.
