Seeing on a planning website (Undercover Tourist) that the busiest days for 2022 include June 4- Aug 21st.
Our California trip is from August 18-28th.
Would we really notice a big difference in crowds on the weekend of the 20/21st vs the weekend of the 26/27th?

Not sure but check AP blackout days and end dates of special promotional tickets. Those can really drive the crowds.

Crowd calendars are notoriously terrible for DL so don't count on them. That said, a lot of local kids will be back in school about the third week in August.

Haunted Mansion will likely be closed by late August, to install the Nightmare Before Christmas overlay. The start of Halloween Time keeps getting earlier...

We used to go late August for every trip, because it was markedly less crowded. In 4 trips between 2009 and 2016, I think the longest we ever waited in a line was around 45 minutes (Radiator Springs Racers, the year Cars Land opened).

I think most people around the country are mostly done with vacationing by that time, kids are in school or getting ready to go back. Here in Texas we usually didn't start until the first week of September, but a couple years ago they moved it up so now we start mid-August, and we are among that group that is done vacationing :(

It's possible that things have changed, we haven't been since 2016, and with all the changes from the pandemic, the loss of Fast Pass, etc., who knows if that's the same. But I would definitely advise going the latest you possibly can.

Yes sorry. Thanks for clarifying.
Would that make it a slightly quieter day?
Maybe, maybe not. Passholders are usually blocked out of “busier” times so it may be that they expect that weekend to still be busy (hence the blockouts). But sometimes those days end up being lighter if the day visitors don’t pan out as expected.
