Whatever book that was is totally wrong. As with all the character meals, the characters will be out for just about the entire time you will be dining. They will rotate quite a bit for breaks but there should be at least one character making the rounds the whole time.

I'd advise you to maybe consider getting another guide book.

They also "hang out" in the middle of the restaurant between "rotations" around the room. So if you miss a princess, just wait and they'll come back.

What book gave out that info? That is way wrong! All 3 meals at Akershus are character meals and they rotate around the dining room all day/evening.
