We have our resort booked Sept 5-11th.
The flights are horrible flying to Orlando on Labor Day.

What does everyone think about flying down on Sunday (1day early) and renting a value or mod for 1 night? (There's no availabilty at the resost we already have booked.)

We've never done a split stay.
 
I do it just about every time I go now. We drive down but don't get there until around 3:30 or 4, I see no reason to pay for a deluxe (which is where I usually stay) for that first night. I've tried two values, Pop and ASSp, and have decided to stick to moderates for that first night stay. Just a personal preference.
 
We've done this a bunch of times for the exact reason you are. We have stayed at a value before moving and we've stayed at the Hyatt inside the airport. When doing that we hop on the Magical Express early the next AM and are on our way.

Which one we do depends on the rate of both options. We've found both to be easy peasy.
 

big PITA to move after 1 day.

It's really not a problem, pack one day's clothes either in your carry on or in a ziploc or packing cube. You can even just give the rest of your bags to bell services when you check in and tell them you are moving the next day. Call them the next morning and remind them and they'll move your luggage, they will do that if you take them to your room as well. Your bags won't arrive until later in the afternoon but I just check out of resort one when I'm up and ready and go ahead over to resort two and check in (not necessary sometimes if you do on line check in and get the email with your room number, I'm just old fashioned) then go on to whatever park you were going to that day. You'll get a text when your room is ready, head back to the resort if you want or finish your day in the park. When you get to your room, call bell services and they will bring your bags up.

If you will save more on the cost of the flight than you will spend on the resort and additional meals, then I think it's worth it. I have never found it to be a huge inconvenience to move to my new resort if I've only had a night to settle in at the first one. I often do this to save DVC points - stay at a Value Resort for one night and then have my bags transferred to my DVC resort when I check out in the morning.
 
We do this almost every trip. We can fly out late in the afternoon and stay at a value for less than we can get a hotel room near the airport and fly out early morning. And a Value at Disney is considerably less than the cost of the Hyatt at MCO
We find it super easy, not at all a PITA.
We have bell services keep our bags and move them and our carry-ons to the next resort.
We give them a call on our way out to the park the next morning and by the time we are done and ready to head to the resort our bags have arrived.
If you think you'd need them before late afternoon then you need to move them yourself. But that takes a taxi

We have stayed in a different hotel the night we arrive and then head to magical express the next morning. As others have said I see no reason to pay hundreds of dollars at a deluxe just to go to bed. If it works out to be cost effective go for it!!
 
We're doing that when we go in 2 weeks since we won't arrive at WDW until about 7:00 p.m. I don't think my family will go for a Value, so I'm looking at POR. Actually, I may go through Travelocity or one of those 3rd party sites, because their cost for POR is a lot cheaper than WDW's cost. Since we need 2 rooms per night, every little bit helps. :)

Fly down day early and stay at airport Hyatt and get early running start the next day. Not the cheapest way but I'm sure your airfare savings will offset. We have done it several times and it worked out well. Can walk right into Hotel off the plane.
 
This may be an opportunity for a Priceline bid for $50 or so. We've done this but had a car so we didn't worry about transportation. I'd probably go for a Disney Value Resort if using ME but there is also the opportunity to bid for an airport hotel and still work in Magical Express.

You can still use Magical Express the next day if you were to stay at Hyatt
 
We've done that a few times when adding a day later on. We stay at Pop the first night. It's easy.
 
We also stayed at POP for one night when we came in late. We packed a separate carryon with our clothes for the next day so we didn't have to rummage through big cases. Then put your dirty clothes in the same carryon.
