Are you able to pay for a few meals and use DDP on the others at one sitting?

For example, if we go to Teppan Edo and my wife chooses the vegetable dinner, could I pay cash for just that one meal and use DDP on the remaining meals? Or if I choose to use DDP on 5 of our 6 meals, will they choose the 5 cheapest meals?

Yes, you can mix, and it's not default to the cheapest.

When you are ready to order, let the server know which meals will be on the dining plan and which meal(s) you will be paying cash for. You will be receiving 2 separate bills at the end of the meal, one for the DDP meals and the other for the Out of Pocket meal, so if you specify in advance, the bills will be correct. Otherwise, there is no guarantee that the server will choose the least expensive meal.
