You can rent water craft at alot of the resorts, here is a list from the WDW website:

Fort Wilderness has carriage rides, you can go horseback riding, there are pony rides for the younger children..they use to have a petting zoo but I am not sure if they do any longer. POR/POFQ has horse drawn carriage rides and I think WL does too. POR has a fishing hole, for catch and release fishing. Alot of the resorts have bike rentals
