Dublin Coddle
Preparation time: 15 minutes
Cooking time: 1-1 A½ hours
Serves 4
Ingredients:
3 large onions, sliced
8 slices of bacon, 5mm/ A¼ inch thick
5 large pork sausages cut in chunks
1 kg/2lb potatoes, sliced
4 tbsp finely chopped parsley
300 ml/ A½ pint water or stock
salt and pepper
Method: Layer the onions, bacon, sausages and potatoes in a large saucepan or flameproof casserole, sprinkling half the parsley between the layers and seasoning each layer with salt and pepper. Pour on the water and stock, bring to the boil, then press a sheet of greaseproof paper on top of the stew. Cover with a tightly fitting lid, reduce the heat and simmer for 1-1 A½ hours, until the liquid is greatly reduced and the potatoes are broken down and thickening the liquid. Taste and adjust the seasoning, stir in the remaining parsley and serve hot, with soda bread and a glass of stout.
