Anything we shouldn't miss?

Dh, DD (6) and myself will be in Orlando (from the UK) the first two weeks in Feb 2005
Now, I've ordered our WDW tickets and Universal passes but is there anything that we really shouldn't miss?
We've been lucky enough to visit Orlando before so don't want to spend all our time in the parks.
We have friends who live close by Universal studios so we'll be spending some time with them, and have arranged to drive to Clearwater for a few days in the middle of the holiday. We also have PSs booked for Epcot's Princess breakfast and Chef Mickeys.
Ideas, Disney or otherwise, would be great. Has anyone visited the Salvadore Dali museum? What about any of the dinner shows?

I have done the Arabrian Horses I enjoyed it - others did not - I think if you got a bargin on your tickets you enjoyed it - if you paid the going rate you did not.

first of all when visiting museums be sure to go when they are opened - We tried to visit one and it was closed this was a Monday or Tuesday....

there is also a garden in Orlando that is surpose to be lovely!!!
