My 11 year old son, (whose been to WDW 7 times in 5 years), has the following recommendations:
1. Coral Seas Restaurant in EPCOT. (This restaurant looks out into the huge fish tank at the living Seas pavilion.)
2. Rainforest Cafe in Downtown Disney or Animal Kingdom. (Animatronic Animals are all around you inside this restaurant. The make noise and move at different times. Its noisey but fun.)
3. Garden Grill in EPCOT (This restaurant in the Land in EPCOT, spins. There are also Characters that walk around Chip and Dale, Mickey and Minnie. )
4. SciFi Dine In in MGM (This is a Drive in. You eat in Fake Cars and there are big screens playing Cartoon and movie clips.)
5. Cinderella's Royal Table in MK (Get to eat in the Castle, it's always fun. )

Hi, we have 3 boys too. Our boys like all those mentioned and also like Chef Mickey's. My kids feel you are never too old for Mickey (thank goodness).
PS's are Disney's idea of reservations. Basically most restaurants accept PS's 90 days in advance of your desire to eat there. If you are going during a busy season, they are definitely a plus. We found on our last trip that even having a PS for a late lunch worked in our favor if we showed up early because of timing or hunger, we were seated before walkups. We generally make at least one every day. Some people are more go with the flow so you have to go with what works for your family.
Hoop Dee Doo Revue is a fun dinner show at Ft Wilderness. It is kinda pricey but a lot of fun. That can actually be scheduled two years in advance but we've gotten seats at 4 mos out without difficulty.
Another fun albeit pricey dinner show that my boys reallllllly loved was Medieval Times. This show is in Kissimmee so a car is necessary for that.
You don't mention when you are going, but I would strongly advise you to head to your local library and check out some of the Disney guidebooks. There are many! There is sooo much there, it's sort of overwhelming to go in with no basic idea of what you want to do. Additionally, the info board associated with these boards is fantastic. I thought all the prices would compare to the hoopdedoo, I can handle the $15-$25 & will be getting some of the vouchers to help with cost, since I read they can be used at the character meals
My 9-year-old's favorite sit-down restaurants are Teppanyaki, Whispering Canyon and Prime Time Cafe. He will also willingly go to Boma, Akershus, Marrakesh, Le Cellier and San Angel. He doesn't like Mama Melrose, Sci Fi (food, not atmosphere) or Ohana. For counter service, he likes Pecos Bill's, San Angel Cantina and Toy Story Pizza Planet.
Teppenyaki (love the entertaining chefs)
Sci-Fi (they've never been but have been reading ALL about it)
Beaches n'Cream (for burger and a shake)
Cape May Clam Bake (if you like seafood - they said)
Chef Mickeys was their choice of a character breakfast
