Ok, so a la carte menu is in place at Maya Grill breakfast. It was not busy at all, as the poor servers were just standing around.
The menu has traditional fare as well as Mexican inspired (a steak ranchero burrito type thing). I got the traditional breakfast and Orange Juice and paid $15 (almost as much as the buffet). Son's mickey waffle meal was $5, so cheaper for kids and enough food.
Other offerings included a breakfast skillet (cheese, eggs, meat), lighter fare such as continental breakfast, oatmeal, parfaits, etc etc.
Overall, I'd have been happier with the buffet, though breakfast was fine here. I miss being able to just get in and out without waiting.
