Can anyone provide me a good tiered cake and icing recipe? I am going to attempt to make a tiered cake (Luau theme) for a party I am going to. I am looking for a somewhat dense type of cake, like a wedding cake.

I plan on making the bottom layer the "ocean" with the top layer the "island" using crushed vanilla wafers. Also if anyone else has any good tips on decorating the cake that would be great. I found Nemo figures in the Dollar store I was going to place in the "ocean" layer. I have to figure out what to make rocks out of for the shore line and a Tiki hut for the island with palm trees. This is my first attempt to make a cake like this so wish me luck!

I'd use a pound cake recipe as that never lets me down - weigh the eggs and add equal quantities of butter, sugar and flour (you may need a splash or two of milk at the finish to adjust the consistency if the eggs are very fresh). Or try a classic madeira recipe - I'm at work at the moment so i can't get my WI recipe book, but that has an excellent recipe for madeira cake (a dense plain cake flavoured with a little lemon) which can be used for formal cakes.

I'd make rocks out of that rolling icing or marzipan - colour with food colouring or roll in chopped nuts. I'd probably ice with buttercream (although its a bit sweet usually) as its easy to get the wave effect - softened butter mixed with confectioner's sugar until it has a "crisp" feeling.

Sounds nice. Good luck. I don't have any suggestions other than maybe you will find some info and ideas at cakecentral.com.

ok, here is my first attempt at making a cake like this. I found a recipe online that everyone was raving about. This is just a trial run, I haven't tasted it yet but it came out cute. I used the wrong kind of icing because its all I had in the house.

Nice job. It looks cute. Not bad at all for a trial cake:thumbsup2

That looks great! I think the icing looks fine as it is -sort of wet!

great job! :thumbsup2 does it taste as good as it looks? ;)

I think it's really cute. No one will know you used the "wrong" icing unless you tell them!

Thanks everyone. The cake is excellent, moist and a little dense, not like a sponge cake. Its even better the next day and right from the fridge. would make a great wedding cake. Here is the link to recipe I used but I cut it in half.

White Almond sour cream cake.
