We too are flying WestJet in March ... but it is for the first time, so I don't have any real answers to your questions (sorry!)!! But I have read really positive comments on here and that helped me make the decision to fly with them. Plus the
travel agent I booked through had just flown on them too and he was VERY impressed with their service!
We are travelling with our almost 5 yr old dd and our 2.5yr old dd, as well as my parents. So I too am worrying a bit about the youngest, because I am not going to be bringing along her carseat (we did last year). She will just kick the seat in front of her and I won't be able to pull down the tray for her to play on. We have flown the last two years, and both girls have been so good. I was actually very surprised. They are so fascinated with everything that is going on they really don't have a lot of time to worry about getting down. Plus with all of the getting ready and then the serving of the drinks, handing out earphones and newspapers, etc ... and then you go through all of the collections ... they can't get out in the aisle to go anywhere

I just brought along a lot of stickers (their favourite) and colouring books (colour wonder by crayola is great), plus some treats they don't get often, like a sucker or something and that keeps them interested for that in between time. We are there before we know it!
I did read that some flights have tvs in the back of each seat ... maybe this will happen

Teletoon would go over well with us for a temporary diversion!
My biggest worry is about getting seated together for the flight. We had real issues with A/C last year. We booked a United Flight that was run by A/C, so their systems can't cross over to request seats ... a big screw up, so we ended up in the emergency rows, which of course children can't sit in, so we had to get people to switch and the ladies at the A/C desk were very rude about it. Finally she practically threw the tickets at my mom and dad and oldest dd and told them they'd have to talk to the stewardess. Well she was really nice and had a row switch with them immediately. We had problems on the way home too ... so I am hesitant again to use them.
I've heard a lot of good things about West Jet, so I am hoping we will have a good experience too
