Anyone else stock up on beef/meats around the holidays?

Youngest son is working in the meat department at a local grocery store. He always lets me know about special sales that are going on. I am tired of chicken so right now I’m concentrating on ground beef and beef roasts. I partial freeze my meat, and then vacuum seal with my Food Saver.

It helps to get a better vacuum seal if you partially freeze your meat. It you didn’t, when it would start vacuum sealing, it would squeeze all the moisture out of the meat and it could prevent you from getting a good seal. So partially freezing, for an hour or two, will help your seal.

interesting. I'll have to try that. can you do the partial freeze in the vacuum bag and then just seal it?
 
We have a deep sea fisherman in the neighborhood, so we’re constantly restocked with fresh seafood that we freeze. And, my husband’s clients send him high quality beef packages for the holidays, so I’m always using and rotating what we have in the freezer. If I stock up, it’s bone in chicken breasts and turkey breasts. Usually from the local butcher..but he loves to keep his prices pretty high. Mhmmm.

have you ever tried the food saver liquid block bags?
 
Historically, January and August are when I used to restock the freezer due to sales but haven’t kept that schedule for a few years - less people to feed thus slower turnover.
